Modules

01Kitchen Safety Basics

Almost every kitchen accident comes from one of three things: a knife used carelessly, heat left unattended, or a spill left on the floor. Get those three right and the kitchen becomes a safe place to learn.

02Food Hygiene & Safe Storage

Food poisoning is common, unpleasant and almost entirely preventable. Four habits do most of the work: clean hands, separating raw and cooked food, keeping cold food cold and hot food hot, and knowing when to throw food out.

03Planning Simple Meals

The Mediterranean way of eating — vegetables, legumes, grains, olive oil, fish, a little meat and dairy — is one of the best-supported patterns for long-term health. It is also cheap, simple and forgiving, which makes it ideal for everyday cooking.

04Cooking Step by Step

Cooking is sequencing. A recipe that feels overwhelming becomes manageable when it is broken into read → prepare → cook → taste → serve, and when everything is prepared before the heat goes on.

05Cleaning Up & Keeping It Going

The clean-up is where many people's cooking habit quietly ends. A sink full of pans the next morning makes the next meal feel like too much. The answer is not more effort later — it is a small amount of cleaning during and straight after cooking.

For people who want to cook for themselves more safely and more often — whether starting from scratch, returning to the kitchen after a period away, or building the confidence to cook without support. Hands-on sessions in the IMHC training kitchen pair each module with real practice.

Questions

I have never cooked. Is this for me?

Yes — Module 1 assumes no experience at all. We start with safety and the simplest possible meals.

What if I have a special diet?

Follow the advice of your dietitian or doctor. The recipes here are general and easy to adapt; your team can help you adjust them.
